Shrimp
Ingredients:
- 1/2 cup pine nuts
- 4 cups fresh basil, plus more for garnish
- 1/2 cup spearmint
- 4 tsp minced garlic, 1 tsp reserved
- 1/2 cup grated Parmigiana-Reggiano
- Salt & black pepper to taste
- Olive oil
- 1/2 lb fresh shrimp, peeled & deveined
- 2 lemons, 1 lemon sliced into 1/8-in rounds & 1 lemon sliced into wedges
- 1 package pre-made pizza dough
- 7 oz plain ricotta
Directions:
- Optional: In a medium pan over medium heat, toast pine nuts until fragrant (about 3 minutes). Remove from heat. Set aside & let cool.
- In a blender or food processor, combine pine nuts, 4 cups basil, spearmint, and pulse several times. Add 3 tsp garlic, Parmigiano-Reggiano, salt & pepper and pulse several times. Slowly add olive oil and keep pulsing until a smooth paste is achieved.
- Set aside.
Pizza
- Roll out dough into an oblong shape onto a baking sheet.
- Spread basil pesto over entire top of dough. Top with lemon rounds and dollops of ricotta all over.
- Cook dough in oven according to directions on package.
- While dough is cooking, start cooking shrimp.
- In a medium pan over medium heat, cook shrimp, 1 tsp garlic, and squeeze fresh lemon juice to taste. Cook until opaque (about 2 minutes per side).
- Remove from heat and set aside.
- Remove cooked pizza dough and assemble while still hot.
- Top with cooked shrimp and garnish with remaining fresh basil. Squeeze fresh lemon juice over pizza for an extra hint of refreshing citrus-y flavor.
- Serve.
